Sweet Potato Cacao Brownies (Gluten-Free & Dairy-Free)

These brownies are one of my favorite things to bake when I want something nourishing and comforting. They’re rich, chocolatey, and just the right amount of sweet. The sweet potato makes them moist and satisfying, while cacao and healthy fats bring in that deep, grounding flavor and steady energy.

They're free of gluten, dairy, and refined sugar, and filled with ingredients that actually support your body and mood. Whether you’re sharing them with others or saving a batch for yourself, these brownies are a beautiful reminder that nourishment can also be joyful.

Ingredients:

  • 1 cup cooked peeled and mashed organic sweet potato (about 1 medium/large)
  • 1 cup unsweetened organic peanut butter (or almond butter)
  • 2 large organic eggs (or 2 flax eggs)
  • ⅓ cup pure maple syrup or honey (less/slightly more to taste)
  • 2 tsp pure vanilla extract
  • ⅔ cup organic cacao powder (or unsweetened cocoa powder)
  • ½ tsp baking soda
  • ½ tsp ground cinnamon
  • ½ tsp sea salt
  • ½ cup dark chocolate chips or chopped dark chocolate (look for 70% cacao or higher)
  • ½ cup chopped walnuts (optional)

Instructions:

  1. Cook the sweet potato until tender — either boil peeled chunks for 15–20 minutes or roast it whole. Let it cool, then mash or purée until smooth.
  2. Preheat your oven to 350°F (175°C).
  3. Oil or line two pie dishes (I love using ceramic) or one 9x9-inch baking pan. If using a 9x9, the brownies will need more baking time.
  4. In a large bowl, mix together the sweet potato, peanut butter, eggs, maple syrup, and vanilla until smooth.
  5. Stir in the cacao powder, baking soda, salt, and cinnamon until a thick batter forms.
  6. Gently fold in chocolate chips and chopped walnuts
  7. Spread the batter into your prepared pan(s), and sprinkle a few extra chips or nuts on top if you’d like!
  8. Bake for 20 minutes in pie dishes, or 25–30 minutes in a 9x9 pan, until the center is set and a toothpick comes out mostly clean.
  9. Let them cool for at least an hour before slicing. Brownies firm up as they rest.

Storage:

Store brownies in an airtight container at room temperature for up to 3 days, or in the fridge for up to a week. They’re extra fudgy chilled, and you can always warm up gently.
