These sweet potato cacao brownies are one of my go-to recipes when I want something nourishing and delicious. Naturally sweetened, gluten-free, and made with love.
Ingredients:
- 1 cup cooked and mashed organic sweet potato (about 1 medium-large)
- 1 cup unsweetened organic peanut butter (or almond butter)
- 2 large organic eggs
- ⅓ cup pure maple syrup or honey (less/slightly more to taste)
- 2 tsp pure vanilla extract
- ⅔ cup organic cacao powder (or unsweetened cocoa powder)
- ½ tsp baking soda
- ½ tsp ground cinnamon
- 1 tsp sea salt
- 1 cup dark chocolate chips or chopped dark chocolate (look for 70% cacao or higher)

Instructions:
- Cook the sweet potato until tender — boil chunks for 15–20 minutes or roast whole. Cool, then mash or purée until smooth.
- Preheat your oven to 350°F (175°C). Line a 9-inch square baking pan with unbleached parchment paper.
- In a large bowl, mix sweet potato, peanut butter, eggs, maple syrup, and vanilla until smooth.
- Stir in cacao powder, baking soda, salt, and cinnamon until a thick batter forms.
- Fold in chocolate chips.
- Spread batter evenly into the prepared pan. Add extra chocolate chips on top if you'd like. (;
- Bake for 23–28 minutes, or until the center reaches 180°F and a toothpick comes out mostly clean.
- Cool completely (at least 1 hour) before slicing. They firm up as they cool!

Notes & Tips:
- Store in the fridge for 5–6 days or freeze to save for later.
- Swap peanut butter for almond or sunflower seed butter for a nut-free option.
- Try adding chopped walnuts or swirling in more nut butter before baking.
- These brownies are extra delicious the next day (if you can wait!).
